These Spiced Carrot Cake Bliss Bites are a delightful and nutritious snack, perfect for a quick energy boost throughout the day! Bursting with flavor and health benefits, they make a fantastic addition to your snack repertoire. My kids enjoy these on weekends when they\’re craving chocolate; they honestly taste like a delicious carrot chocolate cake with everything in between!

Ingredients:

  • ½ cup oats
  • ¼ cup shredded carrots
  • 10 dates, pitted
  • ½ cup walnuts
  • 1/3 cup pecans
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • 1/2 teaspoon ground ginger (or 1 teaspoon freshly grated ginger)
  • A pinch of nutmeg, cinnamon, and salt
  • Homemade Nutella (optional, for filling)
  • Crushed walnuts (for topping)

Instructions:

  1. Combine Ingredients: In a food processor, combine the oats, shredded carrots, pitted dates, pecans, vanilla extract, maple syrup, ground ginger, nutmeg, cinnamon, and salt. Process until a sticky dough forms and everything is well blended.
  2. Form the Bliss Bites: Using your hands, roll the mixture into small balls, about 1 inch in diameter. If you want to add a little surprise, you can make an indentation in the center of each ball and fill it with a small dollop of homemade Nutella before rolling it back into a ball or drizzling Nutella on top and adding crushed walnuts.
  3. Chill: Place the carrot cake bliss bites on a tray lined with parchment paper. Chill in the refrigerator for at least 30 minutes to firm up.
  4. Serve: Once chilled, serve and enjoy these delicious and nutritious bliss bites! You can also roll them in crushed walnuts for added texture and flavor.
