  • Salt and pepper, to taste

For the Spiced Ground Beef:

  • 300g (about 10 oz) ground beef (or lamb for variation)
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon (optional for warmth)
  • 1/2 teaspoon paprika (optional for a smoky flavor)
  • 1/4 teaspoon ground allspice (optional for depth)
  • Salt and pepper, to taste

For the Yogurt Sauce:

  • 1 cup plain Greek yogurt (or dairy-free yogurt if preferred)
  • 1 tablespoon tahini (optional, for creaminess)
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Garnishes:

  • 1/4 cup pomegranate seeds
  • Fresh parsley, chopped (for garnish)
  • 1/4 cup toasted pine nuts or walnuts (optional, for added crunch)

Instructions:

1. Prepare the Eggplant:
Preheat your oven to 400°F (200°C).
Arrange the eggplant slices on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Toss the slices to coat evenly.
Roast in the oven for 20-25 minutes, flipping halfway through, until the eggplant is tender and slightly golden.

2. Cook the Ground Beef:
While the eggplant is roasting, heat a tablespoon of olive oil in a skillet over medium-high heat. Add the chopped onion and sauté until softened, about 5 minutes.
Add the minced garlic and cook for another minute until fragrant.
Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon. This should take about 7-10 minutes.
Stir in the cumin, coriander, cinnamon (if using), paprika, allspice, salt, and pepper. Cook for another 3-4 minutes, allowing the spices to toast and infuse the beef. Remove from heat and set aside.

3. Make the Yogurt Sauce:
In a bowl, combine the Greek yogurt, tahini (if using), and lemon juice. Stir until smooth and creamy. Season with salt and pepper to taste.

4. Assemble the Bowl:
Place the roasted eggplant slices in a serving bowl.
Spoon the spiced ground beef mixture evenly over the eggplant.
Top with a generous spoonful of the yogurt sauce.
Sprinkle pomegranate seeds, fresh parsley, and toasted pine nuts or walnuts (if using) on top.

5. Serve:
Serve the Eggplant with Spiced Ground Beef, Yogurt, and Pomegranate Bowl with warm pita or rice on the side for a more filling meal.
