Introducing Fattoush Zaatar Chips Salad: The Salad My Kids Actually Love!

Fattoush Zaatar Chips Salad

Serves: 4-6

Ingredients:

For the Zaatar Chips:

  • 2 pieces of pita bread, cut into small cubes
  • 2 tablespoons zaatar
  • 2 tablespoons olive oil

For the Salad:

  • 1 green pepper, chopped
  • 1 yellow pepper, chopped
  • 1 red pepper, chopped
  • 4-5 radishes, thinly sliced
  • 1 cup lettuce, chopped
  • 1/2 cup watercress, roughly chopped
  • 1/4 cup fresh parsley, chopped

For the Sauce:

  • 2 tablespoons pomegranate molasses
  • 2 tablespoons olive oil
  • 1 teaspoon sumac
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions:

  1. Make the Zaatar Chips:
    • Preheat your oven to 180°C (350°F).
    • Spread the pita bread cubes onto a baking tray.
    • Drizzle the cubes with olive oil and sprinkle with zaatar. Toss to coat evenly.
    • Bake for 10-12 minutes, or until the pita chips are golden brown and crispy. Remove from the oven and set aside to cool.
  2. Prepare the Salad:
    • In a large mixing bowl, combine the chopped green, yellow, and red peppers, radishes, lettuce, watercress, and parsley.
  3. Make the Sauce:
    • In a small bowl, whisk together the pomegranate molasses, olive oil, sumac, garlic powder, salt, and pepper until smooth and well combined.
  4. Assemble the Salad:
    • Drizzle the sauce over the salad and toss gently to combine.
    • Just before serving, sprinkle the zaatar chips on top for added crunch.
