We’re already on Day 2 of our Ramadan Series: A Bowl A Day, and I have a fun, vibrant dish to share with you today. Now, I know this isn’t your traditional Ramadan food, but hear me out! This Guac and Grill Sourdough Tortilla Bowl has all the right fats, protein, and carbs you need for a satisfying and nourishing meal. It’s the perfect balance of flavors, from creamy guacamole and tangy mango salsa to smoky grilled veggies and juicy sirloin steak, all wrapped in a warm, homemade sourdough tortilla.

Sometimes during Ramadan, you crave something different, something that feels fresh and satisfying but still keeps you nourished. This dish has all the nutrients you need to power through the day while adding a little something special to your meal rotation.

Let’s dive into this delicious recipe!

Ingredients

For the Mango Salsa:

  • 1 mango, diced
  • 1 red pepper, diced
  • 1 small onion, diced
  • Fresh cilantro, chopped
  • 1 spring onion, chopped
  • Juice of 1 lemon
  • 1 tablespoon olive oil
  • Chili flakes to taste

For the Guacamole:

  • 2 ripe avocados, mashed
  • 1 small onion, finely chopped
  • Fresh cilantro, chopped
  • Parsley, chopped
  • A drizzle of sriracha sauce
  • Black pepper and salt, to taste

For the Grilled Veggies:

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced into lengths
  • Olive oil, for sautéing

For the Sirloin Steak:

  • 1 sirloin steak
  • Salt and pepper, to taste
  • Ghee or olive oil, for grilling

For the Sourdough Tortilla:

  • 2 cups all-purpose flour (or a mix of whole wheat and all-purpose flour)
  • 1/2 cup active sourdough starter (fed and bubbly)
  • 1/4 cup olive oil or melted butter
  • 1/2 cup warm water (adjust as needed)
  • 1/2 teaspoon salt

Instructions

  1. Prepare the Mango Salsa:
    • In a bowl, combine the diced mango, red pepper, onion, cilantro, spring onion, lemon juice, and olive oil.
    • Stir everything together and season with chili flakes to taste. Set aside.
  2. Make the Guacamole:
    • In a bowl, mash the avocados with a fork.
    • Add the onion, cilantro, parsley, sriracha sauce, black pepper, and salt. Mix until smooth and creamy. Set aside.
  3. Grill the Vegetables:
    • Heat a pan over medium-high heat and add a bit of olive oil.
    • Add the onion and bell peppers to the pan, sautéing until they become tender, about 5-7 minutes. Set aside.
  4. Grill the Sirloin Steak:
    • Season the sirloin steak with salt and pepper on both sides.
    • Heat a pan over medium-high heat and add ghee or olive oil.
    • Grill the steak for about 3 minutes on each side for a medium-rare result (adjust cooking time based on your preferred doneness). Once grilled, set aside to rest before slicing.
  5. Prepare the Sourdough Tortillas:
    • Mix the Dough: In a large bowl, combine the flour and salt. Add the sourdough starter, olive oil (or butter), and warm water. Mix until a rough dough forms. If it’s too dry, add a little more water, one tablespoon at a time.
    • Knead: Transfer the dough to a lightly floured surface and knead for about 5 minutes until smooth and elastic.
    • Rest: Place the dough back in the bowl, cover with a damp towel, and let it rest for at least 2-4 hours at room temperature. For a stronger sourdough flavor, let it ferment for up to 8 hours.
    • Divide and Roll: Divide the dough into 8-10 equal pieces. Roll each piece into a ball, then flatten and roll out into a thin tortilla shape (about 6-8 inches in diameter).
    • Cook: Heat a cast-iron skillet or non-stick pan over medium-high heat. Cook each tortilla for about 30-60 seconds on each side, until bubbles form and brown spots appear.
    • Keep Warm: Place cooked tortillas in a clean kitchen towel to keep them warm and pliable until serving.
  6. Assemble the Bowl:
    • In a bowl, layer the following ingredients:
      • Sourdough tortilla (broken into pieces if needed)
      • Guacamole
      • Mango salsa
      • Grilled veggies
      • Grilled sirloin steak (sliced)

Optional: If you prefer a sandwich, you can spread cream cheese on the tortilla before assembling your fillings.

Sourdough Tortilla Recipe

If you’ve never made sourdough tortillas before, you’re in for a treat. These homemade tortillas add an incredible layer of flavor that store-bought tortillas can’t match. The sourdough starter gives them a beautiful tangy taste, while the olive oil keeps them soft and pliable. The full recipe for the sourdough tortillas is available on my website, but here’s a quick breakdown:

  1. Mix the dough and knead for 5 minutes.
  2. Let it rest for a few hours (or longer for that extra sourdough flavor).
  3. Roll out the dough and cook each tortilla until golden and soft.

Why This Dish Works for Ramadan

I know, it’s not your typical Ramadan meal, but hear me out—this bowl is packed with everything you need: healthy fats from the guacamole, protein from the grilled sirloin steak, and carbs from the veggies and homemade sourdough tortillas.
