Rustic Mortar Pesto

Pesto is one of those recipes I make almost weekly. Whether it’s for pasta, a sandwich spread, or even in a tart, it’s such a versatile, fresh sauce that I always have on hand. I love making my pesto from scratch, using my trusty mortar and pestle. But don’t worry, a food processor works just as well if you\’re in a pinch!

Here’s why I make my own: store-bought pesto often contains preservatives and artificial flavors, which I try to avoid. Plus, it’s so easy to make at home! Fresh basil, pine nuts, garlic, Parmesan, and olive oil. That’s it. No added chemicals, just real, delicious ingredients.

The best part? It only takes 5 minutes to prepare, and it has a much longer shelf life when stored properly. It\’s a true staple in my kitchen, and I always love having it ready to elevate my meals.

Here\’s the simple recipe:

Ingredients:

  • Fresh basil (about 2 cups)
  • 1/4 cup pine nuts
  • 2 garlic cloves, minced
  • 1/2 cup freshly grated Parmesan
  • 1/2 cup olive oil (more or less depending on consistency)
  • Salt and pepper to taste

Instructions:

  1. In a mortar and pestle (or food processor), combine basil, pine nuts, garlic, and Parmesan.
  2. Gradually add the olive oil while mixing until you reach your desired consistency.
  3. Season with salt and pepper, and it’s ready to go!
