Berry Apricot Yogurt Freeze Delight

I absolutely love this simple and delicious dessert, especially when my kids ask for ice cream. They call this their \”healthy ice cream\” and can’t resist licking their fingers when they’re done! It takes just 10 minutes to prepare and is ready to enjoy in 2 hours. You can easily add other fruits, but the antioxidants found in berries combined with the iron-rich apricot make this a truly nutritious snack.

Health Benefits:

  • Antioxidants: The frozen berries are packed with antioxidants, which help combat oxidative stress and support overall health.
  • Iron & Fiber: Apricots are not only rich in iron, which is essential for healthy blood circulation, but they also provide dietary fiber that aids digestion and keeps little tummies happy.
  • Calcium & Probiotics: Yogurt, especially kefir, is a fantastic source of calcium and probiotics. These nutrients promote strong bones and a healthy gut, crucial for growing children.
  • Natural Sweetness: Using honey as a sweetener keeps processed sugars at bay while providing antibacterial properties and additional nutrients.

I don’t believe in avoiding dairy unless someone is sensitive to it. In moderation, dairy can be beneficial, especially for children. The calcium and probiotics it provides can significantly support their growth and health. It’s all about balance and steering clear of processed sugars and unhealthy foods!

Ingredients:

  • 1 cup yogurt (preferably kefir)
  • 2 tablespoons honey (plus extra for drizzling on top)
  • 1 tablespoon orange juice
  • 1 teaspoon orange zest
  • 4 pieces of apricot
  • ½ cup frozen berries
  • ½ cup homemade granola

Instructions:

  1. In a square tray lined with parchment paper, mix the yogurt with honey, orange juice, and orange zest. Spread this mixture evenly in the tray.
  2. On a cutting board, slice the apricots into long strips. Mix these with the frozen berries and spread the mixture over the yogurt layer.
  3. Sprinkle the homemade granola on top and freeze for 2 hours.
  4. Once frozen, take it out and drizzle with honey or my homemade Nutella.
  5. You can break it into pieces with your hands for a fun, easy treat!
