Gut Glow Salad

October 19, 2024

I absolutely love this vibrant Gut Glow Salad, especially for its refreshing crunch and gut-nourishing ingredients! This salad features purple cabbage, which adds a pop of color and a wealth of nutrients. It takes just 10 minutes to prepare and is perfect as a side dish or a light meal.

Health Benefits:

  • Fiber-Rich: Purple cabbage and carrots are high in dietary fiber, supporting healthy digestion and helping you feel full.
  • Antioxidants: Red apples are packed with antioxidants that can help reduce inflammation and protect your cells.
  • Healthy Fats: Toasted almonds add a delightful crunch while providing healthy fats and protein, essential for overall health.
  • Gut-Friendly: The fresh ingredients combined with my vinaigrette sauce promote a healthy gut environment.

Ingredients:

  • 2 cups purple cabbage, grated
  • 1 cup carrots, grated
  • 1 cup red apples, grated (with the skin for added nutrients)
  • 2 spring onions, finely chopped
  • ½ cup toasted almonds, roughly chopped
  • ½ cup vinaigrette sauce (check out my vinaigrette recipe; the ratio is perfect for this mix—you’ll thank me for how good it tastes!)

Instructions:

  1. In a large mixing bowl, combine the grated purple cabbage, carrots, red apples, and chopped spring onions.
  2. Add the toasted almonds for an extra crunch.
  3. Drizzle my vinaigrette sauce over the salad and toss gently until everything is well coated.
  4. Allow the salad to sit for a few minutes to let the flavors meld together.
  5. Serve immediately as a refreshing side or light meal!

Enjoy your delicious and nourishing Gut Glow Salad, perfect for boosting your gut health and satisfying your taste buds!
